What there is to eat

The menu reads in two halves. One is for sharing — porções, caldinhos and antepastos — and the other is a plate of your own: ciabatta sandwiches, fresh pasta and tábuas. Both run at the same hours, so a table can build a full dinner or stop at two things and a glass.

The porções, for the middle of the table

They start with the bread basket and carry on through the cheeses and cured meats. There is gorgonzola, served with honey and toast, and burrata with pesto and toast. The buffalo mozzarella pearls come seasoned, again with toast and pesto, and salami closes the savoury line. These are plates to pick at between two or three people while you read the menu, and toast is the constant across the whole section.

The caldinhos, the north-eastern corner of the menu

There are three, and all three arrive with toast. The feijão one is built on black beans and comes with quail egg. The vaca atolada works cassava with carne de sol and the same quail egg: it is the broth version of an inland pot dish. And the camarão one comes from a prawn bisque, with prawns in it. One caldinho and a glass of wine is the short dinner for anyone coming up from the beach without much appetite.

The antepastos

This is where the bruschettas are, in three versions: traditional, black olive and mozzarella pearl. Next to them, the aubergine caponata, which is the vegan starter on the menu, and two fuller burratas: burrata ao sugo, with toast and pesto, and burrata with rocket and parma ham on top. This is the section that goes with the first round of drinks.

The four sandwiches, all on ciabatta

There are four, and all four come on ciabatta. The house one, da Fonte, carries pernil pork, rocket, buffalo mozzarella and pickled red onion. The italiano goes with fresh buffalo mozzarella, Parma ham, tomato, rocket and pesto. The vegetarian repeats the buffalo mozzarella with tomato, rocket and pesto. And the vegan builds the aubergine caponata with rocket, tomato and red onion sauce. Having the vegetarian and the vegan option written out separately on the menu is the detail that settles a mixed table before anyone sits down.

The fresh pasta, made in the house

There are four: chicken fagottini, prawn ravioli, caprese rondelli and mushroom green tortellini. They all arrive with toast and parmesan, and on all of them you choose the sauce: ao sugo, white or pesto. If the table wants to go a step further, sautéed prawns can be added. This is the part of the menu that turns the bar into a proper dinner, without moving from the table where you started with a glass.

The tábuas and the cheesecake

There are two tábuas, both with pesto and toast. The first brings together mozzarella pearls, sun-dried tomato, Italian salami and olives. The second is the long one: mozzarella pearls and block mozzarella, gorgonzola, provolone, olives and sun-dried tomato. It is what a table of four orders when it wants one thing in the middle and to carry on talking. For the end there is one dessert, cheesecake, in two versions: red fruits or yellow fruits.

What there is to drink

Wine comes by the glass or the bottle, in red, white and rosé, and the house offers corkage if you want to bring your own. A glass beside a caldinho or a tábua is how this menu is designed to start.

The cocktails are grouped into three families: clássicos, autorais — the house's own — and sem álcool, the column that settles anyone driving or not drinking. Three families means the bar is not an accessory to the dining room: it has a list of its own and a hand to work it.

Then there is beer, in 600ml bottles and long necks, plus draught chopp. That is the drink of the table that stays seated a long while, which in a bar closing at two in the morning is nearly every table.

The room

Fonte opens once it is already dark, and the room looks like this: low light, wooden tables, a bar with copper bottles on display and the glasses poured before the food arrives. The sandwiches come out on Portuguese tile, and the porções and tábuas arrive on wooden boards or in the pan, straight from the heat to the table.

It is an enclosed room, set back from the avenue, and that changes the noise: the main street of Pipa stays on the other side of the entrance. The sign at the door presents the place as FONTE · BAR e CAFÉ · PIPA, which describes it well: somewhere with a bar and tables, and a kitchen menu up front.

When to go

From Tuesday to Sunday the bar opens at 18:00 and runs until 02:00. That is eight hours of night, so two very different plans fit.

The early one starts at six, as the village switches on and the room is empty: this is the slot for anyone coming up from the beach, ordering a porção and a glass and still undecided about dinner. The long one runs from midnight onwards, with the centre in motion: that is when a ciabatta sandwich or a caldinho becomes the food that closes the night.

Being in the centre, it works as a first stop or a last one: you can walk there from anywhere in the village and the car stays where it is.
