What to eat

The house defines itself by the product rather than the format: its own description calls it a restaurant specialising in meat. What organises the table is a hand-written board of cuts of the day, five names long. And the rule is written up there too, the same for all of them: every cut comes with three sides of your choosing and in a portion for two. That settles the evening before the meat arrives — you are not ordering a plate, you are ordering a board to share.

The five cuts on the board

Prime Rib. The one the board puts first, and the one that comes as a full menu: it arrives with a starter and two glasses of wine on top of the three sides. It is the choice for a table that wants the evening settled from the start.

Filé Mignon. The house's lean, tender cut — what you order when someone at the table would rather have beef without a fat cap.

Bife de Chorizo. The wide sirloin with its rim of fat, the classic cut of the River Plate grill. Here it comes out on a cast-iron plate, rosemary on top, and gets carved at the table.

Entranha. Skirt steak: long fibres, fast cooking and a great deal of flavour. This is the cut ordered by people who came for beef and know what they want.

Picanha. The Brazilian cut by definition, the fat cap on top melting down into the meat as it grills.

What arrives alongside

The house's own photographs show how a plate is built. The meat comes with fresh rosemary on top and chimichurri beside it, and the sides that keep coming back are farofa, rice, potatoes and vinagrete, the Brazilian chopped-tomato relish. The rocket salad with shavings of cheese is served at the table, in front of you, rather than plated in advance.

The grill is not the whole menu either. The gallery shows costela — short rib — plated with salad and vinagrete, prawns next to rings of pineapple run across the griddle, and salmon cooked on the same cast-iron plate as the beef. There is a turn to the sea and a fish on hand for the table where not everyone wants red meat.

What to drink

Wine sits in the middle of the table, and the house says so itself: the Prime Rib menu includes two glasses of wine, so it is poured by the glass and not only by the bottle. In the house's photographs the glasses are filled on almost every laid table, next to the boards of meat and the potatoes.
